Trim the stem end from the cabbage, then slice it into thin, even strips.
Finely chop the onion and carrot.
Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, then stir in the carrot and continue cooking until both vegetables are tender and lightly caramelized.
Add the mushrooms and cook until they release their moisture and begin to brown. Let most of the liquid evaporate before moving on.
Stir in the garlic and cook briefly until fragrant. Add the cabbage, cover the skillet, and cook for about 6 minutes, until it begins to soften.
Add the salt, black pepper, and paprika, then stir until the vegetables are evenly coated.
Stir in the tomato paste and cook for another 2 to 3 minutes, stirring occasionally, until everything is well combined and flavorful.
Sprinkle with fresh parsley and serve hot.
