Simple ingredients include potatoes, mushrooms, cream cheese wedges, onion, carrots, garlic, and smoked chicken.


I haven’t met anyone who doesn’t love a good Cheese Potato Soup recipe. There are so many ways and variations to make this potato soup.

Tips for Perfect Cheese Potato Soup


Cut your potatoes into pieces no larger than ¾″ and try to keep them around the same size so that they cook at the same time.

To make this soup nice and creamy, I recommend pureeing about half of it either by using an immersion blender or with a spoon, and then stirring the pureed soup back into the pot.


How to make Cheese Potato Soup

Chop potatoes, smoked chicken and place into the large pot, add 2.5 l. water and simmer on low-medium heat for 20 min.


Chop 2 onions and 1 carrot, heat the oil and then sauté onion for 4 min. or until it gets nice and fragrant, and carrot for 6 min.

Add the unsalted butter, chopped mushrooms, turn the heat to medium-high and stir constantly for 6 minutes, this is where the flavour starts.


Add seasonings, salt, paprika, black pepper and cook for 1 minute.


Then transfer to the large pot with potatoes and smoked chicken, add the cream cheese wedges, cover the lid and simmer for 7 min.

Ingredients

  • 1 lb. (400 gr.) Smoked Chicken Breast

  • 1 1/2 lb. (600 gr.) 4 Potatoes

  • 1 lb. (400 gr.) Mushrooms

  • 2 Onions

  • 1 Carrot

  • 4 tbsp. Unsalted Butter

  • Parsley

  • 1 tbsp. Salt

  • 1/2 tsp. Black pepper

  • 1 tbsp. Paprika

  • 1 1/2 lb. 300 g. Cream cheese wedges

Directions

How long can homemade Cheese Potato Soup last in refrigerator


Once Cheese Potato Soup is cooked, let cool and cover in the refrigerator for up to 3 days.

If required, freeze in an airtight container for up to 3 months


How do you reheat soup?


To Reheat In Your Microwave: Cover loosely with a microwave safe lid and microwave on high heat setting for 2-3 minutes, or until hot.

For Stove Top: Pour soup into a pot or sauce pan. Heat, while stirring occasionally.


NOTES

For an even thicker consistency, mix 1-2 tablespoons of cornstarch with 3 tablespoons of water or milk, and add to the soup when it’s simmering. Mix through well and allow to thicken.
