Ingredients

  • 3 tbsp olive oil
  • 1 lb (450 g) ground beef
  • 1 medium onion chopped
  • 1 medium carrot grated
  • 2 tbsp tomato paste
  • 3 garlic cloves minced
  • 1 tsp salt
  • 1/3 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 tsp paprika
  • 1/2 cup beef broth
  • 1 lb (450 g) cabbage chopped
  • 1 tbsp Worcestershire sauce
  • 3 tbsp fresh parsley chopped
  • Sour cream optional, for serving

Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook for about 7 minutes, breaking it apart as it cooks, until nicely browned.
  • Add the chopped onion and grated carrot. Cook together with the beef for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  • Add the tomato paste and minced garlic. Stir well and cook for about 2 minutes.
  • Add the salt, black pepper, thyme, and paprika. Stir until the beef and vegetables are evenly coated with the seasonings.
  • Pour in the beef broth and stir to combine. Spread the chopped cabbage evenly over the top.
  • Cover the skillet with a lid, reduce the heat to low, and cook for 15 minutes.
  • Remove the lid, add the Worcestershire sauce, and stir everything together well. Cover again and cook for another 5 minutes.
  • Remove the lid and add the fresh parsley. Increase the heat to high and cook for about 3 minutes, stirring occasionally, until the excess liquid has evaporated.
  • Remove from the heat and serve warm with sour cream, if desired.

Notes

  • Chicken broth or water can be used instead of beef broth.
  • Don’t add extra broth unless needed. The cabbage releases moisture while it cooks.
  • If there is still too much liquid in the skillet at the end, cook uncovered for another minute or two until it evaporates.
  • For the best texture, cook the cabbage until tender but not overly soft.
