Quick and cozy garlic butter chicken bites made in one skillet in about 15 minutes. Golden seared chicken tossed in a rich garlic butter sauce makes this an easy and comforting weeknight dinner.

Equipment

  • Large skillet
  • Knife
  • Cutting board

Ingredients 

  • 1 1/2 pounds boneless skinless chicken breasts cut into bite size pieces
  • salt to taste
  • black pepper to taste
  • 2 tablespoons all purpose flour divided
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 5 garlic cloves minced
  • 1/2 teaspoon dried oregano
  • 1/3 cup water or chicken broth
  • fresh parsley for garnish

Instructions

  • Cut the chicken into bite size pieces and season with salt and black pepper.
  • Lightly toss the chicken with 1 tablespoon of flour and shake off any excess.
  • Heat olive oil in a large skillet over medium high heat and cook the chicken until golden and cooked through. Transfer to a plate.
  • Reduce heat to medium low and melt butter in the same skillet.
  • Add garlic and cook about 30 seconds until fragrant.
  • Stir in remaining flour and oregano.
  • Pour in water or chicken broth and stir until the sauce becomes smooth and slightly thickened.
  • Return chicken to the skillet and toss until fully coated in the garlic butter sauce.
  • Garnish with fresh parsley and serve immediately.

Notes

Do not overcrowd the pan or the chicken will steam instead of sear.
If the sauce becomes too thick add a splash of broth or water.
Fresh garlic gives the best flavor.
Serve with rice mashed potatoes or pasta to absorb the sauce.
