Quick and cozy garlic butter chicken bites made in one skillet in about 15 minutes. Golden seared chicken tossed in a rich garlic butter sauce makes this an easy and comforting weeknight dinner.
1 1/2poundsboneless skinless chicken breasts cut into bite size pieces
salt to taste
black pepper to taste
2tablespoonsall purpose flour divided
1tablespoonolive oil
3tablespoonsbutter
5garlic cloves minced
1/2teaspoondried oregano
1/3cupwater or chicken broth
fresh parsley for garnish
Instructions
Cut the chicken into bite size pieces and season with salt and black pepper.
Lightly toss the chicken with 1 tablespoon of flour and shake off any excess.
Heat olive oil in a large skillet over medium high heat and cook the chicken until golden and cooked through. Transfer to a plate.
Reduce heat to medium low and melt butter in the same skillet.
Add garlic and cook about 30 seconds until fragrant.
Stir in remaining flour and oregano.
Pour in water or chicken broth and stir until the sauce becomes smooth and slightly thickened.
Return chicken to the skillet and toss until fully coated in the garlic butter sauce.
Garnish with fresh parsley and serve immediately.
Notes
Do not overcrowd the pan or the chicken will steam instead of sear.If the sauce becomes too thick add a splash of broth or water.Fresh garlic gives the best flavor.Serve with rice mashed potatoes or pasta to absorb the sauce.
