Easy Chicken Goulash Recipe

Hungarian Chicken Goulash

Ingredients 

  • 2 lb. (900g) Chicken Thighs

For seasoning the chicken thighs (bowl)

  • 4 tbsp. Oil
  • 1/3 tsp. Salt
  • 1/3 tsp. Black pepper
  • 1/3 tsp. Chili
  • 1/2 tsp. Coriander
  • 1 tsp. Paprika

For cooking

  • 1 lb. (450g) Mushrooms
  • 2 Bell Peppers
  • 2 Onion
  • 4 Garlic Cloves
  • 1 cup (200 gr.) Tomato Passata
  • 3/4 tsp. Salt
  • 1 oz. Parsley

Instructions

  • Season the chicken thighs with oil, salt, black pepper, chili, coriander, and paprika. Gently toss until everything is evenly coated.
  • Heat a large skillet with a little oil and add the chicken. Let it cook until lightly golden on the outside. It doesn’t need to be fully cooked yet. Don’t worry if things don’t look perfect right away. The flavors will come together as everything cooks.
  • Add the chopped onion and garlic to the pan. Stir and let everything cook for a few minutes, just until softened and fragrant.
  • Stir in the bell peppers and let them soften slightly. Add the mushrooms and continue cooking until they release their moisture and turn tender.
  • Pour in the tomato passata and season with salt. Lower the heat and let the sauce simmer gently until slightly thickened.
  • Finish with fresh parsley, give everything a gentle stir, and taste to adjust seasoning. Serve warm.
