Ingredients 

For Chicken

  • 6 boneless skinless chicken thighs
  • 1 tsp salt
  • 3/4 tsp black pepper
  • 3/4 tsp paprika
  • 2 tbsp olive oil

For Sauce

  • 2 tbsp butter
  • 1/2 onion, diced
  • 3 garlic cloves, minced
  • 1/3 cup dry white wine
  • 3/4 cup chicken broth
  • 1 1/2 tbsp Dijon mustard
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/3 tsp black pepper
  • 1/2 tsp salt
  • 1 tsp whole grain mustard
  • fresh parsley

Instructions

  • Season chicken thighs with salt, pepper, and paprika.
  • Heat olive oil in a large skillet and cook chicken for 5–6 minutes per side until golden. Remove and set aside.
  • Reduce heat and melt butter in the same skillet. Cook onion for 2–3 minutes, then add garlic.
  • Pour in wine and simmer 2 minutes. Add chicken broth and scrape the pan. Stir in Dijon mustard.
  • Add heavy cream, thyme, oregano, pepper, salt and whole grain mustard. Stir until smooth.
  • Return chicken and simmer 7–8 minutes until cooked through and sauce thickens.
  • Garnish with parsley and serve.

Notes

  • Use a good quality Dijon mustard for the best flavor. It makes a noticeable difference in the sauce.
  • Let the wine simmer for about 2 minutes so the alcohol cooks off and the flavor concentrates.
  • If you prefer not to use wine, simply substitute extra chicken broth.
  • If the sauce becomes too thick, add a small splash of chicken broth or cream.
  • Chicken thighs work best because they stay juicy and tender while simmering.
  • Store leftovers in the refrigerator for up to 3–4 days.
