How to Cook Barbecue Ribs in the Oven
Prepare ribs as above, then pat them dry with a sheet of paper towel.
How to Remove the Membrane
Flip the ribs over so the bone side is facing up.
The membrane should come off pretty easily, but if it’s being stubborn, grab your paring knife to help loosen it.
Gently slide the knife under the membrane at one end of the rack. Then, using a paper towel to grip the membrane, peel it off the back of the ribs. It should come off in one smooth piece.

Seasoning for Pork Ribs
Slather both sides of the ribs with mustard, then sprinkle with salt, black pepper, coriander, garlic powder, and paprika. Massage the dry rub onto both sides of the ribs.

Seal with parchment paper and aluminum foil and bake at 300°F (150°C) for 2½ hours.

What you need for BBQ Sauce
Our BBQ sauce uses just 4 ingredients and keeps up to 2 weeks in the fridge.
Use any barbecue sauce you like, but we love this quick version: combine ketchup, soy sauce, brown sugar, and smoked paprika, then simmer for 5 minutes.
And here’s what you need for Barbecue Sauce. Nothing unique here.

For those who love a little heat, you can add in chili or cayenne powder!
Remove ribs from the oven, remove foil and spread the tops of the ribs with the barbecue sauce mixture.

Increase the oven to 400°F (200°C) and bake 10-12 minutes, uncovered, until the glaze is sticky and lightly caramelized.

FAQ
Can I make ribs without foil? Absolutely! While covering them does help keep them moist and tender, you can definitely go without it. What temperature should I use for fall-off-the-bone ribs? Aim for around 275°F (135°C) for about 2½ to 3 hours, and then crank it up to 400°F (200°C) for the last 10 to 12 minutes.
What internal temperature should I look for? For those perfectly tender ribs, you want to hit about 195–203°F (90–95°C) so the collagen breaks down nicely. Just remember to check how easily the meat pulls away from the bone for that ultimate tenderness.
Can I prepare them in advance? Yes, you can! Just bake them, let them cool, and refrigerate for up to 2 days. When you’re ready to serve, glaze and caramelize them for that delicious finish.
Do I need a rack? It’s not a must, but using a rack over a lined tray can help the fat render and prevent the bark from getting soggy.
Spare ribs or baby back? Baby backs cook a little quicker, while spare ribs are meatier and might take an extra 15 to 25 minutes.
Storage & Reheat
Storage: Store leftover ribs in an airtight container in the fridge for up to 4 days, or freeze tightly wrapped in foil for up to 3 months.
Reheat: Heat in the oven at 300°F (150°C) for 12 to 15 minutes, or until thoroughly warmed. To keep them juicy, brush on a bit of extra BBQ sauce before reheating. If you’re in a hurry, you can microwave them on medium heat in 30-second intervals, covering with a damp paper towel.
Tip: Let frozen ribs thaw overnight in the fridge before reheating.
Serve up these mouthwatering BBQ ribs alongside some creamy mashed potatoes, crunchy coleslaw, or sweet grilled corn.
