Chicken livers are one of the healthiest forms of animal protein around. Despite them being robust in flavor and quite meaty, they complement surrounding flavors so well without overpowering anything.
Chicken livers are exactly that. They’re not considered red meat, despite their appearance, but they are organ meat. They are quite strong in flavor which is why soaking them in milk helps.
If you’ve ever tried to cook chicken livers before and they were too dry or rubbery, I promise you, it’s worth trying again.

Key Ingredients For Chicken Liver Recipe
- Oil for sautéing
- Yellow onion and garlic, chopped small.
- Mushrooms, i use brown mushrooms (cremini) because they’re a bit deeper in flavor than white button mushrooms, but you use what you prefer.
- Chicken Livers, de-veined and rinsed.
- Milk and cream cheese wedges.
- Seasonings: Salt and Pepper.
- Fresh parsley, chopped for garnish (optional)
Instructions (Step-by-Step)
Prepare the chicken livers, cut them in half, and trim and discard any visible fat or green parts.

Chop the mushrooms, onion and garlic cloves.




Heat oil in a skillet over medium heat, add chopped onion and sauté for 5-6 minutes until golden.

Add the mushrooms to the skillet and cook for about 6 minutes, stirring over high heat.

Add milk and cream cheese to the mushrooms, and cook for 5 minutes, stirring over medium heat.


Add salt, black pepper, and chicken livers, and cook for 8–10 minutes, stirring over medium heat.



Finally add chopped garlic and parsley.

Totally agree mate it got me baffled
I wish I’d seen this recipe when I started cooking chicken livers nearly 60 years ago! (Yes, really!) These were the BEST! The cream cheese smooths the rough edges and the creaminess is sooo good. I would back off on the garlic a little, and I threw in a couple of glugs of red wine at the end; marsala would work too.
A couple of suggestions: change the measurements for the milk and cream cheese: cups, not grams. And correct the spelling for ‘finally’.
And thank you for my new go-to chicken liver recipe. Can’t wait to puree the leftovers tomorrow for some pate on crackers.
